I don't really care about classics publishers. I just go with whatever has the mostly-agreed-upon best translation. That does seem to be Penguin a lot of the time.

For other publishers, I really enjoy New York Review Books, New Directions, Dalkey Archive, Twisted Spoon Press, Wakefield Press (USA), Exact Change, Atlas Press and Green Integer.
